The signature brand of Funasaka Shuzo is Miyamakiku. Miyamakiku is the name given to the brewery’s Daiginjo sake, which stands out as a dry Daiginjo, setting it apart from traditional Daiginjo varieties.
Crafted by master brewer Hiraoka, who has over 30 years of experience, this Daiginjo has been handed down from generation to generation. The previous master brewer also inherited the techniques from his predecessor, making this a true lineage brew where the brewing skills are meticulously passed down. This can truly be called a “work of art in sake.”
When it comes to Daiginjo, one of its most distinctive features is the “ginjo aroma.” Attracted by its floral fragrance, one might find themselves drinking it more and more, but this “Daiginjo Miyamakiku” is a dry Daiginjo. It offers a smooth throat feel and a soft mouthfeel. Within its softness lies a crisp, dry taste. This sake is not only refined but also robust, making it versatile as a sake to be enjoyed with meals.

One of the main characteristics of Daiginjo is that it uses the heart of the rice grain, the shinpaku, by polishing away much of the rice. As a result, it generally has a sweet “taste” and “aroma,” but this Daiginjo Miyamakiku is different.
“Daiginjo Miyamakiku” is a dry Daiginjo. It refreshingly complements rich flavors and delicate umami of seafood, making them more enjoyable. Additionally, when enjoyed from a wine glass, it pairs excellently with the juicy meat of Hida beef, enhancing the light umami of the meat.

Preservation method:Sealed bottle can be kept in room temperature, unsealed bottle has to be in fridge.
There is no expiry date for Japanese sake, but it can be kept in unsealed condition for 180 days after the date of manufacture for the best quality of the sake. Once it is sealed, please finish the bottle as soon as possible. (within roughly 2 weeks is highly recommended)
