Although categorized as regular sake rather than a designated special type, it is the first sake brewed at the beginning of winter. The quality of this sake plays a pivotal role in determining the overall sake quality at Funasaka Sake Brewery for the entire year.

2. Winter in Hida Takayama is bitterly cold. Moist air from the Sea of Japan brings “snow,” which covers the Hida region. If the snow is not removed promptly, it freezes into ice overnight.
In recent years, advancements in brewing technology have enabled some breweries to simulate cold conditions year-round. However, at Funasaka Sake Brewery, we strive to create sake “in harmony with nature.” Under the guidance of the toji (master brewer), the entire brewery team works together to embrace the cold and brew sake in sync with the winter environment.

Preservation method:Please store the sake chilled until it is finished.
There is no expiry date for Japanese sake, but it can be kept in unsealed condition for 180 days after the date of manufacture for the best quality of the sake. Once it is sealed, please finish the bottle as soon as possible. (within roughly 2 weeks is highly recommended)
