A slightly dry, refreshingly vibrant “winter-limited” namazake.

This is the “namazake” (unpasteurized sake) version of Junmai Ginjo Miyamagiku, the flagship brand of Funasaka Sake Brewery. Available only in winter, this sake is brewed with “Hidahomare,” a premium sake rice cultivated in Gifu Prefecture, polished to 60%. It fully highlights the rich umami inherent to Hidahomare rice.

A slightly dry edition of the representative sake brand of Hida Takayama, “Miyamagiku,” this Junmai sake boasts a “long taste” after-finish unique to its brewing style. It is a true local sake of Hida Takayama, offering flavors that cannot be achieved with any other sake rice.

 2. Winter in Hida Takayama is bitterly cold. Moist air from the Sea of Japan brings “snow,” which covers the Hida region. If the snow is not removed promptly, it freezes into ice overnight.

In recent years, advancements in brewing technology have enabled some breweries to simulate cold conditions year-round. However, at Funasaka Sake Brewery, we strive to create sake “in harmony with nature.” Under the guidance of the toji (master brewer), the entire brewery team works together to embrace the cold and brew sake in sync with the winter environment.

2. 飛驒高山的冬天極為嚴寒。來自日本海的濕潤空氣帶來「雪」,覆蓋飛驒的大地。如果不及時清理積雪,一夜之間就會凍成「冰」。

There is no expiry date for Japanese sake, but it can be kept in unsealed condition for 180 days after the date of manufacture for the best quality of the sake.  Once it is sealed, please finish the bottle as soon as possible. (within roughly 2 weeks is highly recommended)
